I found this recipe on allrecipes.com and we loved it. Aaron walked in from work when I was just finishing up and couldn't resist how yummy they looked. He thought they looked so beautiful, he had to take a picture. And then once I realized how much my family loved them, I thought I'd share the recipe with all of you! Hope you enjoy!
INGREDIENTS
1 (4 ounce) package cream cheese, softened
1 teaspoon ground cumin
1 clove garlic, minced
1/8 teaspoon dried red pepper flakes
6 tomato and oregano tortillas
6 lettuce leaves - rinsed and dried
12 slices deli sliced roast beef
1 avocado, cubed
1 tomato, seeded and chopped
1 cup shredded Colby-Monterey Jack cheese
DIRECTIONS
Mix the cream cheese, cumin, garlic, and chili flakes in a bowl until well blended.
Spread a thin layer of the cream cheese mixture over each tortilla, dividing evenly. Place a lettuce leaf on each tortilla, and top with two roast beef slices. Sprinkle evenly with avocado, tomatoes, and cheese. Starting at one end, gently roll up each tortilla into a tight tube. Slice in half diagonally and place two pieces on 6 serving plates.

I think there's something wrong with this picture?
Okay, as most of you know Colton is all boy! He loves cars, trucks, monsters, dinosaurs, you know, the usual. Well recently he has added guns and shooting to the list, which I'm not thrilled about. But it's not hard to figure out where he gets it from...being that his Dad has recently taken up Paintballing as a hobby! And of course Colton has been dying to use Aaron's paintball gun. So Aaron let him play with it...WITHOUT PAINT BALLS! Caylee got a kick out of it as well!
There is a little video clip at the end of the photos, there isn't much said but if you want to pause the music on my playlist there is a pause button on it. And that might be useful to those of you who don't like my choice of music!

Our Cutie Boy!
Wyatt is getting so big! He is such a little cutie! We all love giving him hugs and kisses....although it drives him crazy. He's getting pretty rough and tough. Unfortunately he learns a lot from Colton about how to bully! Now he's getting smart about when to make his attack on Colton. He waits until I'm changing Colton's diaper (yes, he still isn't potty trained! My goal is by the time he's three) and then he body slams him and sits on him laughing until Colton is done and then Wyatt hurry and runs! It's so funny to watch!

Colton the Photographer!
Colton was playing with my camera and decided to become a photographer. Caylee got a couple shots in too. I thought some were pretty good, and others were just hilarious! So be prepared for the genius work of a two year old when looking at these!

Caylee Lost her First Tooth!
Well the big news at our house is that Caylee lost her first tooth. It came out right in the middle of sacrament meeting at church. She was so excited! Her adult tooth was already coming in before her baby tooth came out! We went to the dentist this week and the x-ray showed a lot more ready to pop out anytime!

Just hanging around!
We had a very wet, cold, Saturday! We were cooped up in the house for most of the day! It was nice to have some relaxing down time to hang out with the family!

Summer in February????
Early last week we had some very warm, summer like weather. Caylee thought it would be fun to put on swimming suits and play in the water hose. So that's just what we did. And the kids had a great time!

San Antonio Rodeo 2008
Last night we went to the San Antonio Rodeo with some friends. We had a great time eating junky carnival food like, funnel cakes and fried snickers. We even ventured into the barns to check out the animals. And I thought it was so cool, we saw a real Billy Goat. I've never seen a goat with a beard in person.

Snack Time
The boys and their Cousin Aydia are nicely sharing a little snack together...a rare occasion to have everyone sharing so nicely off the same plate. Especially when it's an hour and a half after bedtime but their crazy parents won't stop playing Wii. What great kids!

Bedroom Makeover!
Well for those of you who have seen our bedroom you know that it is a very small room filled with extremely large furniture. I love the furniture, especially since it was all handcrafted by my super talented hubby. But, since the room is so small we were starting to feel a little cramped and never wanted to be in our room. So we decided to give it a makeover into something very different and hopefully create a more open feeling. We originally had dark sage green walls with a cedar trim at the top of the wall. Some of our furniture consisted of a large cedar log post bed that Aaron made me as a wedding gift and a very large armoire made out of old fence wood. It was an old, rustic kind of theme. Well we have changed completely to a fresh, traditional feel. We painted the walls a neutral light brown color with a white crown molding. Aaron made me a new headboard. I was wanting a beefy, mantle, pottery barn kind of bed. I'm not good at describing what I visualize in my mind. But Aaron made it even better than I imagined. So here is a little peek at our new room.

Date Night Cuties!
We have a date night rotation that we do with some friends of ours. This was our night to have all the kids at our house. Some of the girls were playing dress up and insisted on taking pictures of them. They are pretty princesses!

Monster Trucks!
Aaron took Colton to the Monster Truck Road Ralley a couple weeks ago! Afterwards, they went to the park together. That same night Aaron took Caylee to the Monster Truck Show! Everyone had a great time!

Just Having Fun!
We were so happy to have my sisters Ashley and Emily home for the holidays! We miss them so much when they are in Utah. But we were able to do a lot of fun things with them and create a lot of lasting memories! We love you guys!

Sun Visors!
With the help of her Grandma Karen, Caylee made everyone personalized sun visors for Christmas. They were each unique and one of a kind in design. Needless to say they were a hit! Thanks Grandma Karen!

Holidays!
Okay...I know the holidays are long gone but I still wanted to post some of our holiday moments. We had a great Christmas; we loved having so much family around this year. We missed those we couldn't be with, though. This is the kids big gift from Santa...it was a group gift. They really loved it, especially Caylee, she's a pretty good driver. Colton on the other hand, still doesn't understand the concept of steering...it makes it difficult to go very far before running into a tree.

Caylee's Dance Recital
Caylee had a Holiday Dance Recital just before Christmas. I'm just really slow at posting! Just in case you're wondering why they all keep looking off to the right, it because they were trying to follow their teacher off stage! Caylee is the one on the far left!
