Roast Beef and Avocado Wraps!


I found this recipe on allrecipes.com and we loved it. Aaron walked in from work when I was just finishing up and couldn't resist how yummy they looked. He thought they looked so beautiful, he had to take a picture. And then once I realized how much my family loved them, I thought I'd share the recipe with all of you! Hope you enjoy!

INGREDIENTS
1 (4 ounce) package cream cheese, softened
1 teaspoon ground cumin
1 clove garlic, minced
1/8 teaspoon dried red pepper flakes
6 tomato and oregano tortillas
6 lettuce leaves - rinsed and dried
12 slices deli sliced roast beef
1 avocado, cubed
1 tomato, seeded and chopped
1 cup shredded Colby-Monterey Jack cheese

DIRECTIONS
Mix the cream cheese, cumin, garlic, and chili flakes in a bowl until well blended.
Spread a thin layer of the cream cheese mixture over each tortilla, dividing evenly. Place a lettuce leaf on each tortilla, and top with two roast beef slices. Sprinkle evenly with avocado, tomatoes, and cheese. Starting at one end, gently roll up each tortilla into a tight tube. Slice in half diagonally and place two pieces on 6 serving plates.

Okay, as most of you know Colton is all boy! He loves cars, trucks, monsters, dinosaurs, you know, the usual. Well recently he has added guns and shooting to the list, which I'm not thrilled about. But it's not hard to figure out where he gets it from...being that his Dad has recently taken up Paintballing as a hobby! And of course Colton has been dying to use Aaron's paintball gun. So Aaron let him play with it...WITHOUT PAINT BALLS! Caylee got a kick out of it as well!

Our Cutie Boy!

Wyatt is getting so big! He is such a little cutie! We all love giving him hugs and kisses....although it drives him crazy. He's getting pretty rough and tough. Unfortunately he learns a lot from Colton about how to bully! Now he's getting smart about when to make his attack on Colton. He waits until I'm changing Colton's diaper (yes, he still isn't potty trained! My goal is by the time he's three) and then he body slams him and sits on him laughing until Colton is done and then Wyatt hurry and runs! It's so funny to watch!



Colton the Photographer!

Colton was playing with my camera and decided to become a photographer. Caylee got a couple shots in too. I thought some were pretty good, and others were just hilarious! So be prepared for the genius work of a two year old when looking at these!

Caylee Lost her First Tooth!


Well the big news at our house is that Caylee lost her first tooth. It came out right in the middle of sacrament meeting at church. She was so excited! Her adult tooth was already coming in before her baby tooth came out! We went to the dentist this week and the x-ray showed a lot more ready to pop out anytime!
